Cajun Salmon & Rocket Pizza

Say goodbye to your usual pizza take out and try out our salmon pizza with an unexpected twist.
Method
Pizza Base
Mix the flour, baking powder and salt in a bowl to form a dough. Remove from the bowl and place on a floured surface, kneed for 10 minutes until smooth, then roll into desired size and shape.
Pizza Sauce
Heat the oil in a pan and gently fry the garlic – be careful not to burn. Add the tomatoes, then all the other ingredients, simmer for 10 minutes then cool until ready to use.
Pizza Composition
Spread the pizza base with sauce, then add the mozzarella and salmon. Sprinkle the Cajun spices over the salmon and place on the pizza base, season with salt and black pepper.
Cook in a fan oven at 180°C for 8-10 minutes, top with rocket leaves and drizzle with olive oil (optional).
Ingredients
Pizza Base
- 350g x self-raising flour
- 350g x natural yogurt
- 1 x tsp baking powder
- 1 x tsp salt
- You can add herbs too and garlic if you like
Pizza Sauce
- 2 x tbsp olive oil
- 2 x garlic cloves, crushed
- 1 x can San Marzano chopped tomatoes
- 2 x heaped tsp of sugar
- 1 x tsp salt
- Handful of torn basil leaves
Toppings
- 200g x skinless salmon (lightly smoked would be good)
- 2 x 125g mozzarella balls
- 1 x bag rocket leaves
- 1 x tsp Cajun spices
