Following significant work on market benchmarking in late 2020/early 2021 and close consultation with our dedicated partner, a gap in the market was identified for a 'celebration roast centrepiece' product.
Throughout the early winter months, our Development Chef Neil worked on a number of recipe ideas and concepts which were ready to present in mid-winter. We presented a range of flavour ideas based around the idea of a Three Fish Roast, and after several taste sessions, agreement was reached on progressing with a Three Fish Roast with Lemon & Dill Butter.
This is a high quality hand-prepared fillet of Scottish salmon filled with cod, traditionally smoked haddock, baby spinach leaves and a zesty lemon & dill butter. It’s rolled and tied so it's oven-ready and easily portioned to feed 6 people, suitable for any festive occasion — but certainly angled as a Christmas indulgence that we think customers will really love.
Such was the positive response to this new product from Waitrose's Fish team, that they presented it to their Entertaining buyer, who subsequently requested a larger version suitable for 8 people. This version will be available for customers to pre-order for Christmas and New Year 2021.
Our Three Fish Roast contains cod and traditionally smoked haddock from an approved Waitrose supplier in Grimsby, who we work closely with. It also contains fresh baby leaf spinach and bay leaves from our trusted herb supplier. The on-shelf version will be presented in a beautifully printed premium box with window — and will certainly stop a few shoppers in their tracks.

Following the popularity of the Teriyaki Salmon Kebabs and Thai Salmon Burgers with grill aficionados and barbeque buffs, the big question for our NPD team regarding BBQ/summer ranges was 'What next?'
We're at the exciting beginning of the NPD process for a new range for 2022, and we will be considering all possibilities alongside in-depth research and many hours of work in the Innovation Centre kitchen. With the support and advisement of Waitrose, this new project will begin to take shape in the coming months.
