These delicious new salmon and trout dishes are the result of a successful New Product Development (NPD) process, which originally began in June 2020. Our extensive benchmarking and comparison work with products on the market was valuable for our own development as an NPD team, and we used this process to help shape our new recipe ideas.
The first and second submissions of sample products took place during Summer 2020 and during that time we showcased a range of products concepts to the Waitrose team.
All of our products were given the green light by a formal approval panel in Autumn 2020. This approval meant that we could then progress to the more complex factory & process stages of the NPD cycle.
During this factory & process stage we worked very closely with our Procurement, Production & Technical partners to ensure that the products could be replicated time after time and to the same high quality standards. This involved numerous trials, testing and new pieces of machinery at our Riverside facility.
The Spring launch window was a fantastic opportunity for Aquascot to showcase the types of products it can produce and potentially open up new opportunities to develop new ones for our dedicated customer.
The new products are:
- Responsibly Sourced Salmon Fillets with Red Chilli & Tomato Marinade
- Responsibly Sourced Trout Fillets with Lemon & Dill Butter
- Responsibly Sourced Salmon Fillets with Cajun Marinade
